Jianshui (Chinese: 建水) is a county in Honghe Hani and Yi Autonomous Prefecture (紅河哈尼族彝族自治州), Yunnan (雲南) Province, China. Jianshui has long been the historic center of the province, Choumeizai has tried a delicious and authentic Tofu in Jianshui Old Town.
There are so many Tofu restaurants in Jianshui Old Town, and they all look the same. The restaurant Choumeizai chooses is quite small but packed with locals, the environment and the food look clean.
Jianshui Tofu, also known as Lin'an Tofu, is a spicy, barbecued form of tofu that is a famous traditional specialty in Jianshui.
Besides tofu, you can also try another specialty of Jianshui, Caoya (草芽) soup. Caoya is a perennial herbaceous plant in the genus Typha, which is crunchy and sweet.
There are several types of tofu served in the restaurant, the most impressive one is dried tofu. After barbecued, the dried tofu becomes chewy, and tastes like pork skin.
Choumeizai wonders how the boss counts the number of the tofu her customers eat, and finds that she uses corn kernels as tokens, very clever.
