Spicy Villa is located deep inside the mountains in Chiang Mai (Thai: เชียงใหม่), Thailand. Spicy Villa is an ‘eco-lounge’ which allows tourists to enjoy nature, it also provides cooking classes for making northern Thai cuisine.
The resort is surrounded by organic farm, it is said that it also supplies vegetables for the royal family of Thai, Choumeizai doubts that, but anyway, Choumeizai still picks some string beans for ingredients.
The kitchen is right next to the canteen, as time is limited, the teacher has washed all the ingredients, Choumeizai only needs to cut them.
Before we put the ingredients in the wok, the teacher will stir fry some dried chili first, then he grinds the dried chili and puts the chili powder in a bottle for later use.
Besides the common ingredients such as cauliflowers and lettuces, basil and coconut milk are also being used.
Perhaps this is an eco-lounge, they use wood fire for cooking, it is not sure if the taste will be better, but the one who cooks will suffer by the smoke for sure.
Before the meal starts, Choumeizai tries the rice wine brewed by the local farmers, it smells good but tastes really strong, Choumeizai can’t stand it.
Here are some of the Thai Cuisines cooked by Choumeizai, you can try.
(1) Green curry chicken. Put in the fried garlic, onions, chicken, string beans and eggplants, then pour coconut milk and green curry paste after 10 minutes, stew around 20 minutes until the eggplants become soft, add some basil at last and churn it.
(2) Sweet and sour chicken with chopped vegetables. Stir fry the garlic, onion and chicken first, then put in cauliflower, carrot, cucumber, pineapple and baby corn, fry together with oyster sauce, soya sauce, sugar and ketchup until the veggies turn soft.
(3)Tom yum fish fillet. Put lemongrass, galangal, chili, garlic, tomato in the boiling water, after the water boils again, put in fish fillet and lime juice. On the other hand, you can put in coconut milk if you want to make tom yum gung.
The dessert is sweet soup cooked with pumpkin, potato and banana, full of the fragrance of pumpkin and banana, a perfect finale of this delicious dinner.
