Jianshui (Chinese: 建水) is a county in Honghe Hani and Yi Autonomous Prefecture (紅河哈尼族彝族自治州), Yunnan (雲南) Province, China. Jianshui has long been the historic center of the province, Choumeizai has tried a delicious and authentic breakfast in Jianshui Old Town.
Mixian (米線) is a type of rice noodle from the Yunnan Province, you can also eat it in Jianshui Old Town. Caoya mixian is the best seller of this small restaurant, only 15 Renminbi for one big bowl.
Mixian here is served in an authentic Yunnan’s style, the noodle and the broth are separate, mix both before you eat.
Besides Mixian, the restaurant also provides Juanfen (卷粉), a type of flat rice noodle made from ordinary non-glutinous rice, tastes better than Mixian.
Caoya (草芽), literally means ‘grass buds’ in Chinese, is a perennial herbaceous plant in the genus Typha. Caoya is Jianshui’s unique vegetable, which is crunchy and sweet, a perfect match with Mixian.
